Tanabata or Chinese Valentine's Day (七夕) is steeped in the beautiful Chinese mythology of "The Cowherd and the Weaver Girl" (牛郎織女) and is revered as a celebration of romantic love, with the belief that they will reunite on the Magpie Bridge in the sky each year on the seventh day of the seventh lunar month.

In honour of this celebration, create a rare triple-layer Wagashi inspired by the glittering night sky!

At the top, learn to create a dark blue amber kingyoku using chrysanthemum white tea and adorned with silver dust to simulate the starry night sky. The lower layers feature red bean mizuyokan representing the earth, and salted coconut kanten jelly resembling the Milky Way, offering a light, summery taste.
